“Horseradish: A Hot Way to Fight Cancer” by Kelley Herring, Healing Gourmet (August 2009)
"Do you savor the heat of horseradish? If so, you may be giving your body an extra layer of armor to fend off cancer.
New research published in the Journal of Agriculture and Food Chemistry found that horseradish contains 10 times more cancer-fighting nutrients (called glucosinolates) than broccoli. And it doesn’t take much to get the benefits. In fact, as little as 1 gram (or less than a teaspoon) can provide a significant benefit, according to researchers.
So go ahead and add an extra dollop of horseradish to your shrimp cocktail and apply liberally to your roasted wild salmon. You’ll add wonderful (calorie-free!) flavor and boost your body’s defenses against cancer." Posted by Healing Gourmet
“To Produce Good Health, Bite Into Fruit and Veggies, ” by Sally Squires, Health and Nutrition Columnist
"But the superstars seem to be cruciferous vegetables: broccoli, Brussels sprouts, cabbage, cauliflower, arugula, kale, kohlrabi, mustard, rutabaga, turnips, bok choy, horseradish, wasabi and watercress."
"These vegetables contain potent substances that seem to protect against cancer and appear to have antimicrobial activity. In April, scientists reported that substances extracted from broccoli and other cruciferous vegetables thwarted (in the laboratory, at least) the bacteria that cause stomach ulcers as well as 23 of 28 other common microbes and fungi. There's also evidence that eating cruciferous vegetables may help counteract the suspected cancer-causing chemicals found in grilled food."
"What makes food better? Scientists believe it comes down to synergy: reactions that take place in the food itself between phytonutrients and vitamins and minerals." click here for the full story.
"A Little Dab of Horseradish Could Help Resist Cancer, ” By Gary Beaumont
Urbana - A new study from the University of Illinois shows that horseradish has substantial quantities of glucosinolates, compounds that have been shown to increase human resistance to cancer.
"Glucosinolates increase the liver's ability to detoxify carcinogens and they may actually suppress the growth of existing tumors," said Mosbah Kushad, U of I associate professor of food-crop systems. "And our analysis of various horseradish varieties shows they are a rich source of these compounds."
Kushad has also been involved in studies of broccoli, Brussels sprouts and other cruciferous vegetables known to contain glucosinolates. His work shows that horseradish has relatively higher levels.
"Horseradish contains more than 10-fold higher glcosinolates than broccoli, so you don't need much horseradish to benefit. In fact, a little dab on your steak will go a long way to providing the same health benefits as broccoli." click here for the full story.
“ROOT OUT CANCER” Men’s Health Magazine writes about the cancer fighting attributes of Horseradish.
“Ketchup isn't the only cancer-fighting condiment. Wasabi and horseradish may help stop tumors, too. When scientists at Michigan State University applied extracts from both roots to several cancers, cell growth declined by as much as 70 percent. Wasabi and horseradish belong to the Mustard family of vegetables, which contain sulfur compounds that have been previously identified as cancer killers, says study author Muraleedharan Nair, Ph.D. Since most wasabi is reconstituted from powder, put your money on horseradish; it’s ground fresh from the root, making it more likely to contain a surfeit of sulfur compounds.” From Men’s Health Magazine for full story click here for the full story.

Compounds in horseradish and other cruciferous vegetables kill cancer!
It is the isothiocyanates in horseradish that provide its nose burning heat. It is safe to say the hotter the horseradish the more isothiocyanates it has. According to an article writen by Ben Wasserman on foodconsumer.org, "Isothiocyanates work against cancer in at least three different ways, early studies showed. They prevent activation of cancer-causing agents or carcinogens, counteract the poisonous effects of activated carcinogens and speed up removal of carcinogens from the body, Cancer Project states, citing earlier studies." click here for more information at foodconsumer.org.
