Wisconsin's Silver Spring Foods Wins Most Medals at World-Wide Mustard Competition in Napa Valley
March 2010 - (Eau Claire, WI)… Silver Spring Beer ‘n Brat Horseradish Mustard, Silver Spring Picante Pepper Mustard, and Silver Spring Organic Deli Mustard with Horseradish took home medals at the recent 2010 Napa Valley World-Wide Mustard Competition. The Eau-Claire based Silver Spring Foods, the world’s largest grower and processor of horseradish, won more awards than any other mustard company.
In addition to the Silver Spring brand successes, the company was awarded a gold medal for Kelchner’s Hot Horseradish Mustard. Silver Spring Foods purchased the Pennsylvania-based Kelchner’s Horseradish Company last summer.
Eric Rygg, marketing manager at Silver Spring Foods, said the competition in the categories where Silver Spring competed was as “hot as the mustards.” A total of 350 mustards were judged from 10 countries, the largest ever event during the competition’s 14-year history.
“The secret to our Silver Spring mustards and sauces begins with the highest-quality ingredients, from the horseradish roots grown on our own Wisconsin farm to the mustard seed we mill in our Eau Claire factory,” Rygg said. “We’re pleased to earn this international industry recognition as a result of our commitment to finding the perfect combination of fresh flavors in our mustards.”
Chefs and food journalists judged the entries for the competition at the Napa Valley Mustard Festival, a 10-day event celebrating wines and mustard.

Silver Spring Foods Manufactures Kosher Horseradish Products for Passover
March 2010 - Silver Spring Foods, Eau Claire, Wisconsin, the world’s largest producer and processor of horseradish, has completed production of two horseradish products for Passover, under the supervision of Rabbi Moshe Kasowitz, St. Paul, Minnesota.
Rabbi Kasowitz recently spent a week at the Silver Spring Foods plant when processed Horseradish for Passover was manufactured, under strict kosher Jewish dietary regulations. The entire factory production was devoted to manufacturing Silver Spring Prepared Horseradish for Passover and Silver Spring Horseradish with Beets. Both products include the Circle K signature stamp from OK Kosher Certification, one of the world’s most respected symbols of kosher approval.
Eric Rygg, marketing manager, said the kosher horseradish production is timed so products can be on the grocery shelves the first week in March.
“We wait until February to make our Passover horseradish products, to ensure the peak of freshness. The horseradish roots are grown locally in fields near the plant, with no long transportation issues involved,” Rygg said.
Both kosher products include fresh ground horseradish, naturally preserved with vinegar and are available in the refrigerated section of grocery and specialty foods stores nationwide and can also be ordered online.
“We keep horseradish cold to keep the flavor hot and fresh,” Rygg said.
All Silver Spring Food products, including horseradish, mustards, organic products and specialty mustard and wasabi sauces are certified kosher, under the supervision of Rabbi Kasowitz. The special horseradish for Passover production is manufactured once a year, under the more strict Passover regulations.

Silver Spring Foods Expands Private Label Capabilities
Eau Claire, WI (January 2010) Silver Spring Foods, the world’s largest horseradish grower and processor, is expanding its private label division. The company will utilize its state of the art equipment, which was installed to allow for versatility and flexibility in food manufacturing and quantities produced. The research and development lab has also been expanded to serve the growing niche market of private label specialty mustards, cocktail sauces and horseradish products.
Eric Rygg, marketing manager and a fourth generation member of the family-owned business, said Silver Spring Foods can use their own established horseradish and specialty mustard award-winning formulas or customize condiments to the unique specifications of private label customers. Rygg said Silver Spring Foods is poised to produce more organic private label products due to an increase in demand from health and wellness consumers. Silver Spring Foods is the only major manufacturer certified to grow and process organic horseradish on a large scale. They are “certified organic” through the USDA and Oregon Tilth.
Rygg said more consumers are buying horseradish and mustard as a healthier option to replace other condiments, but great taste and convenience are still the most important factors.
“As traceability increases in importance among consumers, manufacturers who buy horseradish roots from China and other countries may run into consumer resistance,” said Rygg. “The root is perishable and loses its unique flavor as it ages. Silver Spring can guarantee the origin of our horseradish supply because we grow our own horseradish in Wisconsin and Minnesota, which helps us control the quality from field to factory.”
Silver Spring Foods, noted for making fresh horseradish for 81 years, started producing specialty mustards with horseradish as a key ingredient a decade ago. Wisconsin’s Own Silver Spring Foods Wins GOLD at World-Wide Mustard Competition in Napa Valley

Silver Spring Announces “Bring the Heat” Recipe Contest Winners
Eau Claire, Wis. (Dec. 15, 2008) – Berwyn resident Thomas Woytus and Kim Smyth of New Lenox are Grand Prize winners in the Silver Spring® “Bring the Heat” recipe contest, besting other Chicago-area residents for the prize package valued at $1,800. Woytus wowed judges with his recipe for “Tom’s Sloppy Joes,” and Smyth also impressed with her “Mushroom Stuffed Clams.” Both recipes were prepared with Silver Spring Horseradish. Woytus and Smyth will be treated to a chef-instructed cooking class at the Calphalon® Culinary Center in Chicago with 12 of their friends. They’ll each also receive cookware and a Silver Spring gift basket.
Contestants in the Silver Spring “Bring the Heat” recipe contest, which kicked off Oct. 1 and ended Nov. 7, were asked to turn the heat up on their favorite dishes by incorporating Silver Spring Horseradish. Tom’s Sloppy Joes
Ingredients:
2-½ pounds lean ground chuck
1 cup chopped onion (about 1 large)
1 cup chopped green sweet pepper (about 1 large)
1 cup chopped celery
2 tablespoons sweet pickle relish
3 (8 ounces each) cans tomato sauce
1 tablespoon olive oil
1 cup water
1 cup ketchup
1 tablespoon Silver Spring Horseradish
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon garlic powder
Dash bottled hot pepper sauce or to taste (optional)
Kaiser rolls or hamburger buns. (split and toasted, optional)
Directions:
In a large skillet, cook meat until brown. Drain off fat.
In a covered skillet, sauté vegetables using 1 tablespoon of olive oil until tender.
Stir in tomato sauce, water, ketchup, relish, horseradish, Worcestershire sauce, garlic, salt and hot pepper sauce and sautéed vegetables.
Bring to boiling; reduce heat. Simmer uncovered for about 45 minutes stirring occasionally.
Serve on rolls or hamburger buns.
Makes about 20 sandwiches. (This recipe can be doubled for a crowd.)
Kim’s Mushroom Stuffed Clams
Ingredients:
24 mushrooms, 2 inches in diameter
½ stick butter, melted
24 littleneck clams, shucked
3 tablespoons Silver Spring Horseradish
6 tablespoons mayonnaise
½ teaspoon Worcestershire sauce
6 drops Tabasco® sauce
½ cup corn flakes or seasoned bread crumbs
Directions:
Take stems off of mushrooms, dip cap of mushroom in melted butter and place rounded side down on cookie sheet.
Place a clam into each mushroom cap.
Mix in a separate bowl the horseradish, mayo, Worcestershire and Tabasco and dribble over clams.
Mix the corn flakes or bread crumbs into the remainder of the butter and sprinkle over the top of each mushroom.
Broil until tender and topping turns brown.

Silver Spring Gardens: Purchases Thor-Shackel Horseradish Company

Ed Schaefer, president and CEO of Silver Spring Gardens, the world's largest grower and processor of horseradish products, said the firm will produce Thor’s Hot Horseradish, Thor's Nippy Horseradish Sauce, Thor’s Prepared Beet Horseradish, Thor’s Cocktail Sauce and several other labels.
Both Thor–Shackel Horseradish Company and Silver Spring Gardens have been privately owned and operated for 75 years. Thor–Shackel got it start by selling fresh horseradish products at Chicago’s famous Randolph Street Farmers Market. Silver Spring Gardens will sell the Thor product line to grocery and finer food stores under the Silver Spring brand, worldwide.
The acquisition is the second firm Silver Spring Gardens has purchased in the last six months. The company recently bought the Waldorf, Nuevo Sol and Bella Migliore brand labels from Ventura Foods, LLC, a $1.6 billion privately held company.
Schaefer said the recent acquisitions provide a perfect fit for Silver Spring Gardens, which is expanding its line of products and capabilities as a result of new efficient state–of–the–art technologies available in the new 100,000 square foot plant that recently opened.

Silver Springs Beer’n Brat Mustard: Men’s Health Magazine Names Silver Spring Beer’n Brat Mustard One of 125 “Best Foods for Men”

Silver Spring Gardens passed the mustard test with the Men’s Health magazine food expert advisory team, naming Silver Springs Beer’n Brat Mustard one of the top 125 healthy foods for men. The June issue of Men’s Health magazine, circulation 1.7 million, calls it “sharp as a good chef’s knife with a great spicy kick.”
The food experts’ panel selects brands from national companies, determines nutritional value and selects five or fewer products per food category that meet specific criteria and turn the foods that made the cut over to another group of food experts, according to Dolores Evangelista, Readers’ Service Group specialist at Men’s Health magazine.
“In a perfect world, the best food for you would also be the best tasting,” she said. “Since we live in the real world, we gave flavor the edge, having already weeded out each category’s poor nutritional performers. The result is the best tasting and best-for-you foods for guys.”

Silver Spring Beer’n Brat Horseradish Mustard was named the top horseradish mustard at the recent World-Wide Mustard Competition in Napa Valley, California. Ed Schaefer, president of Silver Spring Gardens, was presented a Gold Award for the mustard, which is also the official mustard of Lambeau Field, Green Bay, Wi.
In addition, Silver Spring Gardens cut the mustard with a silver award for Silver Spring Chipolte Mustard, which received silver in the “pepper hot” division. The two awards come on the heals of Silver Spring Gardens winning the Grand Champion Award last year for Bookbinder’s Hot Horseradish Mustard.
Food journalists and food sensory scientists judged 303 mustards from four countries, competing for top honors at the twelfth annual Napa Valley Mustard Festival. |
