Cheesy Squash Spirals

Ingredients:
  • 4 summer squash, sliced lengthwise 1/8 inch thick
  • 1 tsp salt
  • 5 ounces plain cheese spread
  • 2 tablespoons Silver Spring™ Whole Grain Mustard
  • Chopped fresh herbs, for garnish
Directions:

Toss squash with salt and let sit 15 minutes; pat dry. 

Grill over high heat until well marked on both sides, 3-4 minutes.

Spread each slice with tsp. cheese.

Roll up, secure with toothpick and top with herbs.

Yields: approx. 20 rolls.
