Spicy Peppadew® Stew

Ingredients:

Prep Time: 10 minutes
Cook Time: 45 minutes
2 teaspoons cumin
1/2 teaspoon salt
1 tablespoon fresh cilantro, chopped
1 1/2 cups dried lentils
6 cups water
1 tablespoon vegetable oil
1 1/2 cups onions, chopped
2 cloves garlic, minced
1 fresh chili pepper, chopped
1/3 cup Silver Spring Peppadew® Mustard Sauce
1 large potato, diced
1 carrot, diced
2 teaspoons coriander
3 cups canned, diced tomatoes (you can also use fresh tomatoes)

Directions:

Bring water and lentls to a boil in a pot. Reduce the heat, cover and simmer for about 20 mintues. Heat oil and saute the onions, chili pepper, garlic, and Peppadew® Mustard for 5 minutes in a skillet. Add the carrots, potatoes, cumin and coriander for another minute. Remove the pan from the source of heat. After your lentils are tender, add the tomatoes to the pot as well as the remaining ingredients.Let all simmer for 15 additional minutes.
