- 1 piece puff pastry, thawed
- 1 egg white
- 4 medium-size tomatoes (for a more colorful presentation, use different colored tomatoes, if available)
- 3 tablespoons Silver Spring™ Whole Grain Mustard
- Sea Salt
- 1 shallot, thinly sliced and slices separated into rings
- 1 teaspoon chopped fresh thyme
Preheat the oven to 375 degrees. Place parchment paper on a baking sheet or grease lightly.
Roll out the dough on a floured surface into a 12x15 inch rectangle. Put on the baking sheet and turn a 1/2-inch border over around the outside. Secure the edges by using water and crimping with a fork.
Mix the whisked egg with 1 tablespoon water and brush on the edge of the tart. With a fork, prick the inside of the tart in several places. Bake until browned lightly and cooked slightly in the center, roughly 11-14 minutes. Slightly cool.
While the tart bakes, cut the tomatoes into 1/8-1/4 inch slices. If you choose to remove the seeds, do so gently.
Brush the mustard gently over the baked crust. Place the tomatoes on top of the mustard, overlapping each by 1/2-inch. Make sure to place tightly against the edges, as the tomatoes will slightly shrink. Top with the sea salt, shallot rings and chopped thyme.
Bake for about 20-25 minutes. The crust should be cooked through in the middle and tomatoes softened.
