Combine all sauce ingredients in a small bowl and mix thoroughly.
Shape ground meat into 12 equally sized balls.
Place one ball of ground beef on a small tortilla and press to flatten. Repeat until all tortillas have a thin layer of ground beef on one side. Add a a dash of salt and pepper on top of each.
Add 1/2 tsp of vegetable oil to a pan over medium-high heat. Place tortillas in the pan with the meat facing downwards. Then, press down on each firmly using either a spatula or a burger press. Cook for 3-4 minutes until the ground beef is browned. Repeat process until all tortillas are cooked.
Flip tortilla and add slice of cheese on top of meat side. Let cheese melt, then remove from heat.
Add diced onion, pickles, and shredded lettuce to burger taco. Top with homemade sauce.
