Ingredients for Roasted Beets
- 3-6 slices of your favorite rustic bread
- 6 large beets (or 9 small beets)
- 4 Tbsp. olive oil, divided
- 1/2 cup of parsley
- 1/2 cup of arugula
- 2 Tbsp. sunflower seeds
Ingredients for Horseradish Dressing
- 1.5 Tbsp. Silver Spring Foods Prepared Horseradish
- 1/2 cup creme fraiche
- 5 tsp. fresh squeezed lemon juice
- 1/2 tsp. salt
- 2 Tbsp. water
