Beer Cheese Roast Beef Croque Monsieur

Ingredients:
Beer Cheese Bechamel sauce- 3 Tbsp butter
- 3 Tbsp flour
- 1 cup milk
- ½ cup light beer
- ¼ cup aged cheddar or gruyere shredded
- 2 Tbsp Silver Spring Beer'n Brat Mustard
- Salt and pepper to taste
Sandwich
- 2 cups aged cheddar or gruyere shredded
- 8 slices Italian bread, cut thickly
- 12 slices roast beef
- ½ onion thinly sliced
Directions:
- Preheat the oven to 375F.
- Slice the bread and place in an even layer on a baking sheet.
- Place in oven and bake until lightly toasted, 5 minutes.
- In a small pan caramelize onion over low heat.
- While bread is toasting melt the butter over medium heat in a pot. Once butter is melted add flour and whisk stirring constantly for about 3 minutes. Gradually add milk and beer stirring well until mixture is smooth.
- Slowly add shredded cheese until melted. Season with salt and pepper.
- Remove from heat and stir in Silver Spring Beer'n Brat Mustard.
- To build the sandwich top one of the bread slices with the bechamel sauce, caramelized onions, roast beef and cheese. Top with another piece of toasted bread. Spread bechamel sauce on top and sprinkle shredded cheese on top.
- Bake in the preheated oven for 10-12 minutes.
- Broil the tops of the sandwiches for 2-5 minutes or until desired doneness.
