Honey Chipotle Aioli

Black Bean and Corn Salad

Ingredients:

  • 1 can black beans, rinsed and drained
  • 1 can fire roasted corn, rinsed and drained
  • 1 cup tomatoes, chopped
  • 1 avocado, diced
  • 1 jalapeno, minced
  • 1 orange bell pepper, diced
  • ¼ cup cilantro

Dressing

  • ¼ cup Silver Spring Honey Chipotle Aioli
  • 2 tbsp red wine vinegar
  • 1 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano

Directions:

  1. Combine all dressing ingredients and whisk well.
  2. Add beans, corn, tomatoes, avocado, jalapeno, orange bell pepper and cilantro to large bowl.
  3. Add dressing and toss to combine.
  4. Refrigerate for at least 2 hours. Serve with tortilla chips.
