Horseradish Mashed Potatoes and Gravy

Ingredients:
For the Mashed Potatoes- 2 ½ lbs potatoes
- 4 tbsp butter
- ½ cup warm milk
- 2–4 tbsp Silver Spring Horseradish, to taste
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter
- 2 tbsp flour
- 2 cups beef broth
- 1–3 tbsp Silver Spring Horseradish
- Salt & pepper, to taste
- Sour cream, cream cheese, cheese, bacon, chives, parsley
Directions:
For the Mashed Potatoes- Peel potatoes, cut into chunks, then boil.
- Put potatoes in pot of water, add pinch of salt. Bring to a boil, then simmer 12–15 minutes until very tender.
- Drain well, then return potatoes to hot pot for 1 minute, shaking gently.
- Mash with a potato masher until mostly smooth.
- Add butter, stir until melted. Pour in warm milk a little at a time, stirring, until you like the texture.
- Stir in Silver Spring Horseradish, season with salt and pepper.
For the Gravy
- In small saucepan over medium heat, melt butter.
- Whisk in flour, cook 1–2 minutes until it turns light golden.
- Slowly pour in broth while whisking constantly so you don’t get lumps.
- Bring to a gentle simmer, cook 3–5 minutes until thickened.
- Stir in Silver Spring Horseradish, season with salt and pepper.
