Horseradish Mashed Potatoes and Gravy

Ingredients:

For the Mashed Potatoes
  • 2 ½ lbs potatoes
  • 4 tbsp butter
  • ½ cup warm milk
  • 2–4 tbsp Silver Spring Horseradish, to taste
  • 1 tsp salt
  • ½ tsp black pepper
For the Gravy
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups beef broth
  • 1–3 tbsp Silver Spring Horseradish
  • Salt & pepper, to taste
Optional Garnishes
  • Sour cream, cream cheese, cheese, bacon, chives, parsley

Directions:

For the Mashed Potatoes

  1. Peel potatoes, cut into chunks, then boil.
  2. Put potatoes in pot of water, add pinch of salt. Bring to a boil, then simmer 12–15 minutes until very tender.
  3. Drain well, then return potatoes to hot pot for 1 minute, shaking gently.
  4. Mash with a potato masher until mostly smooth.
  5. Add butter, stir until melted. Pour in warm milk a little at a time, stirring, until you like the texture.
  6. Stir in Silver Spring Horseradish, season with salt and pepper.

For the Gravy

  1. In small saucepan over medium heat, melt butter.
  2. Whisk in flour, cook 1–2 minutes until it turns light golden.
  3. Slowly pour in broth while whisking constantly so you don’t get lumps.
  4. Bring to a gentle simmer, cook 3–5 minutes until thickened.
  5. Stir in Silver Spring Horseradish, season with salt and pepper.
