Club Clairemont Eau Claire Sandwich

Ingredients:
- 3 oz pork roast
- 1 slice colby jack
- 1 cup wild arugula
- 2 tomatoe slices
- 6 Tbsp mayonnaise
- 3 Tsp Silver Spring Dijon Mustard
- ½ cup pickle chips
- 1 oz Silver Spring Prepared Horseradish (for crusting pork roast)
- 3 slices of bread
- oil
- salt and pepper as needed
Directions:
- Toast the bread with oil on both sides until it is a little golden.
- Combine Mayonnaise, Silver Spring Dijon Mustard, pickle chips, and seasoning with salt and pepper.
- Spread sauce one side of the bread. Then layer the pork, cheese, arugula, tomato, onion, more sauce and Silver Spring Prepared Horseradish.
- Repeat building sandwich with the remaining ingredients.
- Cut in four pieces, then it is ready to serve.
